Ingredients
  

  • 1 red apple (sweet, not tart)
  • 1 cup creamy peanut butter (Any creamy peanut butter works well)
  • 1 cup old-fashioned oats

Method
 

    OPTIONAL ADD-INS
    • cinnamon• vanilla• pinch of salt• brown sugar (for more sweetness)
  1. Preheat oven to 350°F
  2. Pulse the oats in a blender or food processor until they resemble a coarse flour. Set aside.
  3. Peel and grate apple using a fine grater, squeeze out any excess moisture from the apple.
  4. Add the apple to the peanut butter and stir to combine.
  5. Stir in pulsed oats until a dough forms.
  6. Cover dough and let sit for 10 minutes to allow the oats to absorb moisture.
  7. Portion out dough balls onto baking sheet and flatten slightly.
  8. Bake at 350°F for 10–12 minutes. Cool on baking sheet for 7–10 minutes before moving.
  9. TIPS FOR BEST RESULTS
    Don't overbake- these cookies should stay soft. Let the cookies cool before moving so they hold together
