- Preheat oven to 350°F
- Pulse the oats in a blender or food processor until they resemble a coarse flour. Set aside.
- Peel and grate apple using a fine grater, squeeze out any excess moisture from the apple.
- Add the apple to the peanut butter and stir to combine.
- Stir in pulsed oats until a dough forms.
- Cover dough and let sit for 10 minutes to allow the oats to absorb moisture.
- Portion out dough balls onto baking sheet and flatten slightly.
- Bake at 350°F for 10–12 minutes. Cool on baking sheet for 7–10 minutes before moving.
