Buttermilk Pancakes (Soft & Fluffy Recipe)

These buttermilk pancakes are soft, fluffy and made with simple pantry ingredients. They come together in minutes and are perfect for an easy homemade breakfast your family will actually ask for again and again!

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups buttermilk
  • 1/3 cup melted unsalted butter
  • 2 eggs
  • 2 tsp vanilla extract

Method
 

  1. In a medium bowl, combine flour, sugar, salt and baking powder. Mix well and set aside.
  2. In a separate bowl, whisk together buttermilk, melted butter, eggs and vanilla extract.
  3. Pour wet ingredients into dry ingredients and mix until just combined. Let batter rest for 5 minutes (this helps create fluffy pancakes).
  4. Heat a skillet over medium heat and lightly grease.
  5. Pour batter onto skillet and cook until bubbles form, then flip and cook until golden brown.
  6. No buttermilk? Use 2 cups room temperature milk, 2 ½ tsp lemon juice. Mix and let stand for 10-15 minutes
