Method
- In a medium bowl, combine flour, sugar, salt and baking powder. Mix well and set aside.
- In a separate bowl, whisk together buttermilk, melted butter, eggs and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until just combined. Let batter rest for 5 minutes (this helps create fluffy pancakes).
- Heat a skillet over medium heat and lightly grease.
- Pour batter onto skillet and cook until bubbles form, then flip and cook until golden brown.
No buttermilk? Use 2 cups room temperature milk, 2 ½ tsp lemon juice. Mix and let stand for 10-15 minutes
