Ingredients

  • 8 large eggs
  • 1 cup fully cooked diced ham 5-6 oz
  • ⅓ cup diced red bell pepper
  • ⅓ cup diced green bell pepper
  • ⅓ cup diced yellow onion
  • 1 large garlic clove finely minced
  • 3 oz sharp cheddar cheese shredded
  • 2 oz Monterey Jack cheese shredded
  • 1½ tablespoon unsalted butter
  • ⅓ cup whole milk
  • ¾ teaspoon Badia Complete Seasoning divided
  • ¼ teaspoon ground black pepper
  • Unsalted butter or nonstick cooking spray for greasing the baking dish

Equipment

  • 8½ X 8½ Inch Casserole dish

Method

  1. Preheat the oven to 350°F. Lightly grease an 8½ × 8½-inch oven-safe glass casserole dish.
  2. Dice the fully cooked ham into approximately ¼-inch cubes.
  3. Melt 1½ tablespoon unsalted butter in a skillet over medium heat. Add the diced bell peppers and onion. Sauté for 3–5 minutes until beginning to soften.
  4. Add the diced ham and cook for another 1–2 minutes, stirring occasionally.
  5. Add the minced garlic and ½ teaspoon Badia Complete Seasoning. Stir and cook for 30–60 seconds. Remove from heat.
  6. In a large bowl, whisk together the eggs, milk, remaining ¼ teaspoon Badia Complete Seasoning, and black pepper until combined.
  7. Spread the sautéed ham and vegetables evenly in the prepared casserole dish.
  8. Combine the shredded cheeses. Sprinkle half of the cheese over the fillings.
  9. Pour the egg mixture evenly over the fillings. Gently distribute the ingredients if needed.
  10. Sprinkle the remaining cheese over the top.
  11. Bake uncovered for approximately 30–40 minutes, or until the center is set and reaches 160°F.
  12. Remove from the oven and rest for 10 minutes before slicing and serving.

Notes

-Ham: Use any variety of fully cooked ham. Smoked ham, uncured ham, or leftover holiday ham all work well.
- Milder flavor: Reduce the Badia Complete Seasoning to ½ teaspoon total or use a simple salt-and-pepper seasoning combination if prefered.
- Cheese: Freshly shredded sharp cheddar and Monterey Jack provide a delicious balance of bold flavor and creaminess.
- Baking: The omelette may puff up around the edges as it bakes and settle slightly while resting.
- Storage: Refrigerate leftovers in an airtight container for up to 3–4 days.
