Ingredients

For the funnel cake batter
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 tablespoons granulated sugar
  • 1½ cups milk
  • 2 large eggs
  • ¼ teaspoon vanilla extract
  • Vegetable or canola oil for deep frying
Optional toppings
  • Powdered sugar
  • Whipped cream
  • Fresh strawberries sliced

Method

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, eggs, and vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients and mix until smooth and free of large lumps.
  4. Transfer the batter to a funnel or food-safe squeeze bottle.
  5. Heat approximately 2 inches of oil in a deep, heavy-bottomed pot to 375°F, keeping the pot no more than one-third full.
  6. Carefully pour the batter into the oil using overlapping zigzag and swirling motions.
  7. Fry until golden brown on the bottom, then carefully flip and cook the other side until golden brown and fully cooked.
  8. Remove the funnel cake from the oil and drain on paper towels or a wire rack.
  9. Repeat with the remaining batter, allowing the oil to return to temperature between batches.
  10. Top with powdered sugar, whipped cream, or sliced strawberries, if desired. Serve warm and enjoy!

Notes

  • Keep the oil temperature around 375°F.
  • A deep-fry thermometer is the most reliable way to check oil temperature.
  • Pour the batter in overlapping zigzag motions rather than one solid circle.
  • The batter should be smooth and pourable without being watery.
  • Fry in manageable batches to avoid overcrowding.
  • Serve immediately for the best texture.
  • All toppings are optional.
