Easy Homemade Meatloaf (Juicy & Flavorful Every Time)

Who doesn't love a juicy meatloaf? This one is everything you'd want in a meatloaf. It's juicy, flavorful, and very easy to make. It's a classic comfort food that you and your family will love.

Ingredients
  

For the Meatloaf:
  • 3 lbs ground beef
  • 1/2 white onion diced
  • 1/2 green bell pepper diced
  • 3 garlic cloves minced
  • 1/2 cup milk
  • 2 slices bread
  • 2 eggs
  • 1/2 tsp worcestershire sauce
  • 2 tbsp seasoned salt
  • 1 tbsp garlic & herb salt-free seasoning
  • 2 tsp paprika
  • 1 tsp dried parsley
  • 1 tsp crushed red pepper flakes
  • 1/2 tsp black pepper
For the Glaze:
  • 1/3 cup barbecue sauce
  • 1 tbsp ketchup
  • 1/2 tbsp mustard
  • 1 tsp brown sugar

Method
 

  1. Preheat oven to 350° F
  2. In a small bowl, combine barbecue sauce, ketchup, brown sugar and mustard. Mix well and set aside.
  3. In a separate bowl soak the bread in the milk for 2-3 minutes until softened.
  4. In a sauce pan sauté diced onion, bell pepper and garlic until softened. Let the vegetables cool slightly before adding to the meat mixture
  5. In a large bowl combine ground beef, soaked bread, milk, eggs, sautéed vegetables, Worcestershire sauce and seasonings. Mix until just combined.
  6. Shape meat mixture into a loaf and bake uncovered for 45 minutes. Remove from the oven, carefully drain excess grease, then spread glaze over the top. Return to oven and bake for an additional 15-20 minutes, or until internal temperature reaches 160° F
  7. Let meatloaf to rest 15 minutes before cutting.

How to Adjust This Recipe

 
This recipe makes a large family-size meatloaf (3 lbs)
  • For a smaller portion, use 1 - 1.5 lbs of ground beef and cut the remaining ingredients in half.
  • You can also freeze half of this meatloaf before baking for an easy future meal.
