Dice a quarter of a white onion, a quarter of a bell pepper, one green onion, and four garlic cloves
Cook one pound of ground beef on high heat, breaking it down into small crumbles. Strain the fat
Reduce heat to medium and add one pound of mild Italian sausage. Once mostly cooked, add the chopped white onions and bell peppers, cooking until the onions are translucent
Add the minced garlic and cook for one minute. Season with salt and pepper. Pour in approximately 36 ounces of pasta sauce and add sugar as needed for balance. Let this simmer on low for 30–45 minutes
Add a 16-ounce pack of spaghetti to a pot of salted boiling water. Cook until al dente
Combine sour cream, cottage cheese, cream cheese, and chopped green onions. Season with salt and pepper to taste
Preheat the oven to 375°F
Spread a layer of meat sauce on the bottom of a 9x13 inch casserole dish and sprinkle with grated Parmesan
Add all the cooked spaghetti in a single even layer
Spread the cheese sauce mixture evenly over the pasta
Top with the remaining meat sauce
Cover the top with 16 ounces of grated mozzarella and dried parsley
Bake for 30–45 minutes at 375f.
For extra color, you can add more green onions during the last 15 minutes and broil for the final 3 minutes until the cheese is golden brown
