Ingredients
  

  • 5 Russet Potatoes (2 lbs)
  • 2 Hard boiled egg yolks mashed
  • 1 rib celery diced
  • 1/4 white onion diced
  • 1/4 yellow bell pepper diced
  • 1 cup mayonnaise
  • 1 tbsp mustard
  • 2 tbsp dill relish
  • salt to taste
  • pepper to taste
  • sugar as needed
  • 1.5 tbsp chicken bouillon powder may add more as needed

Method
 

  1. In a large bowl, combine mayonnaise, mustard, mashed egg yolks, dill relish, celery, bell pepper and onion. Mix well. Season to taste with salt, pepper and sugar. Cover and refrigerate.
  2. Rinse and peel potatoes. Dice them into medium-size cubes and place them in a pot of cool water.
  3. Season the water with chicken bouillon powder and bring the potatoes to a boil. Cook until the potatoes are fork- tender. Drain and let cool.
  4. Mash a small portion of the cooled potatoes to create a creamy base.
  5. Gently fold the potatoes into the prepared dressing until well combined.
  6. Taste and adjust with a little more salt and pepper if desired.
  7. Cover and refrigerate until ready to serve.
  8. Don't skip tasting and adjusting- this is where the flavor really comes together.
