The Best Stuffed Bell Peppers (Hearty & Flavorful)

Ingredients
  

  • 4 bell peppers all colors
  • 1 ½ cups cooked Jasmine rice (or long grain rice)
  • 1 lb ground beef
  • ½ white onion diced
  • 2 celery ribs diced
  • 4 garlic cloves minced
  • 14 oz canned diced tomatoes (with juices)
  • 1 cup tomato sauce
  • 2 tbsp chili powder
  • 3 tsp ground cumin
  • ¾ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp ground black pepper
  • ¼ tsp ground coriander
  • ¼ tsp cayenne pepper
  • salt to taste
  • 1 cup shredded mozzarella cheese (or more as for topping)

Method
 

    Note: This recipe filling makes enough for about 8 bell peppers. If you are using 4 peppers, you may have extra filling- save it for another batch or enjoy on it's own.
  1. Pre-heat oven to 375°F
  2. Cut the tops off the bell peppers, remove seeds, and dice the tops. Set aside.
  3. Bring a large pot of water to a boil. Add the peppers and cook for 5 minutes. Remove and let cool.
  4. In a large skillet over medium-high heat, brown the ground beef. Drain excess fat.
  5. Add diced celery, onion, garlic, reserved bell pepper tops and the seasonings. Cook until the onions are soft.
  6. Stir in diced tomatoes (with juices) and tomato sauce. Mix well.
  7. Add cooked rice, stir to combine, and simmer on low for 5 minutes
  8. Fill the peppers with mixture and place in a baking dish. Top with shredded mozzarella cheese.
  9. Bake uncovered for 40 minutes, or until cheese is melted and bubbly.
  10. Serve and enjoy!
